2 teaspoons vanilla extract

2/3 cup buttermilk

 

Instructions: 

  1. Preheat the oven to 350ºF.
  2. Spray your doughnut pan with nonstick spray.
  3. In a bowl, whisk together flours, baking powder and salt.
  4. In a separate bowl, whisk together butter and sugar until combined.
  5. Add dry ingredients and eggs, mixing until batter is just combined.
  6. Whisk in bananas and vanilla extract, then stir in buttermilk until batter is smooth.
  7. Use a spoon to add batter to the doughnut pan until each mold is about 3/4 full.
  8. Bake doughnuts for 13–15 minutes, until they are set and slightly golden.

 

Glaze

Ingredients

2 cups confectioners’ sugar

5 tablespoons half and half cream

1/2 teaspoon vanilla extract

 

Instructions:

  1. Sift the sugar in a bowl.
  2. Mix in the half and half about a tablespoon at a time.
  3. Stir in the vanilla extract.
  4. Dip the cooled doughnuts in the glaze.
  5. Allow the glaze to harden.

 

Once the glaze has set, pour yourself a cup of coffee and dig in.

1 teaspoon kosher salt

1/2 teaspoon ground nutmeg

2 tablespoons melted coconut oil

1/2 cup mashed bananas

1/2 cup toasted walnut pieces

 

Ingredients for caramelized banana garnish:

2 teaspoons coconut oil

1/4 cup sugar

1/2 cup maple syrup

1 large banana, sliced

1/4 cup toasted walnut pieces

1 pinch kosher salt

 

Instructions for the pancakes:

  1. Combine coconut milk and vinegar in a small bowl.
  2. Set aside for 5 minutes.
  3. Whisk together the dry ingredients in a medium bowl.
  4. Add coconut oil, banana puree, walnuts, and the coconut milk mixture.
  5. Whisk until smooth.
  6. Heat a griddle or nonstick pan over medium-high heat and grease with coconut or vegetable oil.
  7. Pour the cakes and cook for about 2 minutes or until you see little bubbles forming on the edges of the cakes.
  8. Flip and cook another minute or two.
  9. Serve immediately or keep hot in a warm oven until ready to serve.

 

Instructions for the caramelized bananas:

 

  1. In a medium nonstick pan over medium high heat, add coconut oil and sugar.
  2. Let sugar melt.
  3. Add syrup when the sugar is golden brown.
  4. Add bananas, walnuts, and salt, and stir gently to coat until they have a nice golden crust.
  5. Top griddle cakes with hot caramelized bananas, walnuts and caramel sauce.
